Truffle, Artichoke & Mushroom Crostini

This combination sounds too good to be true. And, in reality, it was a little.
I had my jar of truffle and artichoke pesto, and topped it off with a few marinated mushrooms.
Therefore, this was utterly lazy, (nearly entirely) from the contents of a jar, and its only redeeming freshness were the loitering sprigs of thyme.
Nonetheless, this was simple, speedy, and satisfying, and perfect inspiration for a from-scratch version in the future.
Picture it… a roasted artichoke stuffed with creamy, buttery mushroom, perched on top of a crostini, and laced with a slice of white truffle…
But for now, it’s cheap, cheerful, and undeniably moreish.
🍄 Makes 4 crostini
1/2 jar of Belazu Truffle & Artichoke Pesto
1/2 jar of marinated mushrooms
fresh thyme
raw garlic
1. Toast your crostini.
2. Rub with raw garlic.
3. Teaspoon on a dollop of truffle & artichoke pesto.
4. Top with a few marinated mushrooms.
5. Give it that required breath of freshness by decorating with a sprig of thyme.
