Smoked Salmon, Cucumber & Lemon Crostini (Delicious Nov 2020)

This was completely inspired by Delicious magazine's 'Crostini 3 Ways' (Nov 2020) article. I made a few adjustments, replacing the crème fraîche with ricotta, and opting for thyme over dill. Such a delicate and, dare I say it, delicious mouthful.

🍋 Makes 4 crostini

  • 4 tsp ricotta

  • smoked salmon

  • 8 slices cucumber

  • fresh thyme

  • 1 lemon (zest and strips)

  • garlic

  • extra-virgin olive oil

  • cocktail stick

1. Toast your crostini.

2. Rub with raw garlic and drizzle with extra-virgin olive oil.

3. Put a tsp of your ricotta onto the base of each crostino and spread out.

4. Fold on the smoked salmon.

5. Thinly slice your cucumber and skewer two slices onto each cocktail stick.

6. Slice 4 strips of skin off your lemon and perch on the top of your stick.

7. Stab into the crostini.

8. Grate over some lemon zest.

9. Decorate with fresh thyme.
