Salt Beef, Gherkin & Mustard with Dill Crostini (Delicious Nov 2020)

I was delighted when opening the Delicious November 2020 issue to see a column dedicated to crostini... in 3 ways! It appears my motto "a crostino a day keeps the doctor away" is catching on.
Admittedly, this combination of ingredients would have once appeared in Saturday Kitchen's 'Food Hell', but this was a very pleasant surprise. Almost like a petite version of a NY salt beef bagel.
🥒 Makes 4 crostini
4 tsp mayonnaise
2 tsp wholegrain mustard
4 slices salt beef/pastrami
8 gherkins
4 sprigs fresh dill
a few sprigs fresh lambs lettuce
raw garlic
4 cocktail sticks
1. Mix the mayonnaise and mustard together to make your 'mustard mayo'.
2. Pierce 2 gherkins onto each cocktail stick.
3. Toast your crostini.
4. Rub with raw garlic, and start building.
5. Put a tsp of mustard mayo onto each crostino.
6. 'Stick' a sprig of fresh lambs lettuce onto the mayo.
7. Fold on a slice of salt beef.
8. Pierce with your cocktail stick to hold everything in place.
9. Decorate with the fresh dill.
