Ottolenghi's BJ Salmon Crostini

Ottolenghi, Bridget Jones, and salmon. These are three of my favourite things.
Therefore, when I read Ottolenghi's recipe in 'Simple', titled "Bridget Jones's pan-fried salmon with pine nut salsa", well I had to give it a go. I stayed (fairly) true to his salsa (replacing his main ingredient with almonds), went smoked with the salmon instead of fresh, and the only real difference was replacing the gleaming white plate with a crostino.
💃 Makes 4 Crostini
50g currants
2 celery sticks
15g almonds
20g capers
20g large green olives
1 small pinch saffron threads (mixed with 1tbsp hot water)
juice & zest of 1/2 lemon
40ml olive oil
garlic clove
1. Follow Steps 1 & 3 of Ottolenghi's recipe.
2. Toast your crostini and rub with raw garlic.
3. Spoon on your salsa.
4. Fold your smoked salmon on top.
5. Decorate with sprigs of parsley.
6. Thank Ottolenghi, not me, and dive in.
