There is nothing quite like eating pure fat. My daily fat allowance may confidently rocket off the scale, yet there is something truly refreshing about knowing exactly what is going into your body. No comprehensive ingredient list to fathom, no cover-ups, no hidden horrors. Lardo is exactly what it says on the tin (or lack of).
'Tis true, these crostini will never constitute as #healthyeating. Nevertheless, this succulent, melt-in-the-mouth, abundance of flavour, topped off with a sprig of rosemary, is truly bad for me, but oh, don't I know and love it.
💯 Makes 4 crostini
lardo (sliced wafer-thin) - it's tricky to purchase less than 100g, therefore, use what you want, and use the rest for other decadent nibbles!
4 sprigs fresh rosemary
1. Toast your crostini.
2. Give a rub with raw garlic.
3. Top with as much lardo as floats your boat.
4. Garnish with sprigs of fresh rosemary.
5. Affirm "This is fat and I LOVE fat", and unashamedly indulge.
