Fig, Goats Cheese & Crispy Pancetta Crostini

Pleasing on the eyes ✔ Pleasing in the mouth ✔ You can't go wrong with today's 'Fig, Goat's Cheese & Crispy Pancetta Crostini'.
🥖 Makes 4 crostini
1 fig (quartered)
plum jam (any fruit flavour)
2 slices pancetta (halved)
fresh goats cheese log
fresh basil (to garnish)
1. Preheat your oven to 180'C (fan).
2. Cook the pancetta for about 15 minutes till nice and crispy.
3. Cut your fig in quarters.
4. Toast your crostini.
5. Rub with raw garlic and drizzle with extra-virgin olive oil.
6. Slather on a thin layer of plum jam.
7. Perch your 1/4 fig on one side of each crostino.
8. Place the crispy pancetta on the other side.
9. Dollop some fresh goat's cheese in the middle.
10. Decorate with fresh basil.
