This was a cheat. A BIG cheat. I had a broccoli & hummus snack pot, shamelessly emptied the contents onto my crostini, and perfectly perched that tenderstem.
Nevertheless, I've provided a recipe below, because broccoli & hummus... well, how difficult can it be?
🥦 Makes 4 crostini
200g tub of hummus
small bag of unsalted roasted peanuts
4 sprigs of Tenderstem broccoli
1 clove garlic
a glug of extra-virgin olive oil
chilli flakes
salt
pepper
1. Boil up a pan of water and add your Tenderstem broccoli. Cook for a few minutes.
2. Spoon your hummus into a bowl and mix with your roasted peanuts.
3. Crush your garlic clove, throw into a frying pan along with a glug of extra-virgin olive oil and a dash of chilli flakes. Put the heat to medium.
4. Once sizzling, add your cooked Tenderstem, chuck in some salt & pepper, and let your broccoli turn slightly crispy. Take off the heat.
5. Toast your crostini and rub with raw garlic.
6. Dollop on a tbsp of hummus per crostino.
7. Drizzle with the frying pan 'jus', and perch your tenderstem sprigs on top.
8. It's snack-pot simple.
