Roasted Red Pepper Crostini

The simple act of roasting transforms and elevates red peppers. With just a sprinkle of extra-virgin olive oil, salt, pepper, and a few sprigs of rosemary, a truly simple and vibrant crostini topping is created. What's more, the roasting concentrates and enhances sweetness, and the few ingredients make it cheap, easy, and completely wholesome.
🌶️ Makes 4 crostini
3 red peppers
sprinkle of extra-virgin olive oil
salt
pepper
fresh rosemary
1. Preheat your oven to 200'C fan.
2. Cut your peppers in half, de-seed, and sprinkle some extra-virgin olive oil, salt, pepper, and a few sprigs of fresh rosemary.
3. Roast in the oven for half an hour.
4. Once cooked, peel your peppers.
5. Slice into very thin strips.
6. Season with more salt, pepper and a glug of extra-virgin olive oil, and give a good mix.
7. Toast your crostini and rub with raw garlic.
8. Slop your roasted peppers onto your crostini.
9. Stop talking, start eating.
